Christie Caldwell was on hand to power over for the first try and Joe Lockyer scored under the posts after a fine solo run.
Duane Brand scored the first of three tries, quickly followed by Lockyer's second, as Hitchin led 24-6 at the break.
Brand scored another two tries and Steve Hampton, playing at fly-half, was next to go under the posts.
Man of the match George Elleston rounded off a strong performance with a final try, converted by Caldwell.
