Stotfold missed a glorious early chance when Jason Blackett chested down Steven Blower's cross only for Jay Thomas to miscue his volley at Brad Gillham.
Potton threatened when Paul Garrett deceived Richard Beckett and player-boss Jim Benton and played in Brett Donnelly who shot wide of the far post.
The tightness of the first half was followed by Potton dominating the second period. Just after the hour mark, Keith Coughlin's good header at the far post from a corner was well parried by Nigel Blower.
The keeper also denied Stotfold old boy Wes Byrne minutes later before foiling Donnelly. Ben L'Honore also went close to breaking the deadlock in Potton's favour.
Garrett, another former Stotfold player, was out of luck five minutes from time when his free-kick went over the well but hit the post.
Blower tipped another Garrett effort wide minutes later but from the resulting corner, Beech headed the winner.
Stotfold could have rescued a point as Paul Harrington's free-kick created mayhem in the penalty area. Junior George had his header saved from point blank range by Gillham and a couple of shots were blocked with the ball eventually out for a goal kick.

They were unlucky not to go in front when Thomas' strike came back off the post in a fairly even first half.
The hosts went ahead in the 52nd minute as Derek Simmons shot low past Nigel Blower.
A decisive second goal arrived a quarter of an hour later when Jamie Gilsenan set up Greg McIlwain.
Stotfold were reduced to 10 men five minutes from time when Steven Blower was red carded for two cautions (this one for dissent to an assistant referee following a first-half foul).
Sean Brennan almost added a third for the hosts when his volley came back off the bar.
