Three budding chefs have taken home a national award in a college cookery competition.

North Hertfordshire College catering students Emily Simkins, Phil Maddison, and James Wheatley won Best Use of British Produce and Best Wine Pairing at the finals of Zest Quest Asia last week.

NHC was one of only six colleges selected to compete in the finals.

The finals, which took place at The Hilton London Heathrow Airport Terminal 5 signature restaurant, Mr Todiwala’s Kitchen, involved teams of student chefs designing and cooking an Asian-inspired vegan amuse bouche, starter, main course, and dessert to be judged by panels of expert chefs and wine specialists.

As well as creating their own menu, the team also planned wine pairings that complemented the flavours of their dishes. The teams were then required to answer questions from the judging panel regarding the preparation of each dish as well as socio-political factors associated with the ingredients and their designed menu.

Level 2 Professional Cookery student Emily said: "To be able to compete in Zest Quest Asia was an amazing opportunity. It was such a fun experience and I can’t wait to work 10 times harder for next year!

"We have dedicated ourselves to the competition for the last five months in practice and preparation, and all the hard work really paid off. I feel inspired now to explore other Asian cuisines and test my skills further."

Phil said: "The competition was an amazing experience from start to finish. Everybody involved were so accommodating and the teamwork from all the colleges even extended to other teams, which was amazing to see.

"The competition really was fierce, and this experience will definitely benefit me in the future. I can’t wait for next year!"

Catering tutor Anthony Gascoigne added: "Zest Quest Asia encourages and inspires our young chefs to learn the cuisines of countries which are not necessarily on the curriculum and, as a result, has extended the students’ college experience.

"I am so proud the students gave that and more to come away with two special awards, Best Use of British Produce and Best Wine Pairing."
